I’m sure that people do use the oven in the summer, but I can think of a million things that I would rather do.
There are so many reasons to take advantage of garden fruits and vegetables or the farmer’s market and create beautiful, healthy salads that you can eat alone or pair with a side of meat.
I like to make a huge salad with kale, cabbage, watercress, and sprouts on Sundays, then I add whatever ingredients inspire me throughout the week. Broccoli, tomatoes, and cucumbers with vegan ranch or grapefruit, avocado, and coconut roasted chickpeas with tahini dressing are another favorite.
When I was pregnant with my son I survived on watermelon and every fruit imaginable. I wish this recipe was available to me!
